  • 3 medium eggs
  • 300 mililitres whole milk
  • 1/2 teaspoon fine sea salt
  • Sunflower or vegetable oil

Instructions

  1. In a medium bowl, add flour, Rosemary, Thyme and salt. Mix and make a well in the middle, add the eggs and milk.
  2. Whisk together until smooth. Decant into a jug and leave to rest in the fridge for minimum 1 hour or up to 8 hours.
  3. Once ready to cook, pre-heat the oven to 240°C / 475°F / 220°C Fan / Gas Mark 9.
  4. Fill 12 hole muffin tray with the oil, making sure each hole has enough oil to coat the bottom.
  5. Put the tray in the oven for 15 minutes until piping hot. Evenly distribute the mix in each hole and place at the top of the oven with enough room at the top for the Yorkshires to rise.
  6. Reduce the oven temperature to 200°C / 400°F / 180°C Fan / Gas Mark 6.
  7. Cook for 25-30 minutes until deep golden brown and well risen (do not open the door during cooking, or they will collapse).
