Grilled Prawns with Asian Pesto

Tasty grilled prawns marinated in orange juice and garlic, served with a tangy Asian pesto combining almonds, Coriander Leaf and Ginger. Delicious with crusty bread, serves 4 as a main course or 8 as a starter.

- For the Prawns:
- 75 (3 ) orange juice
- 2 ginger ground
- 1 olive oil
- ½ garlic granules
- ¼ sea salt
- 450 (1 ) large raw prawns, peeled and de-veined
- For the Asian Pesto:
- 2 toasted slivered almonds
- 2 coriander leaf
- 2 orange juice
- 1 olive oil
- 1 jalapeno pepper, chopped and de-seeded
- ¼ ginger ground
- sea salt

- Mix the orange juice, Ginger, oil, Garlic Granules and Salt in a medium bowl. Add the prawns and toss to coat well. Cover and leave to marinade for 20 minutes.*
- Meanwhile, for the Pesto, finely chop the almonds in a fod processor. Add the remaining ingredients, cover and process again until the mixture is coarsely chopped. Set aside.*
- Place the prawns on an oiled grill pan. Grill on a medium-heat for 4-6 minutes or until the prawns turn pink, turning occasionally. Serve the prawns with the Asian Pesto.*
