Ingredients

  • 6 sausages
  • 1 tablespoon olive oil
  • 1 tablespoon Schwartz® All Rounder - Garlic
  • 2 tablespoons tomato puree
  • 250 grams cherry tomatoes, halved
  • 100 grams fresh baby spinach, roughly chopped
  • A handful fresh basil extra to serve
  • 1 red onion, finely sliced
  • 50 grams parmesan, finely grated
  • 250 grams pasta of choice

Sausage takes center stage in a delicious ragu seasoned with the bold taste of Schwartz Garlic Seasoning. Combine with fresh spinach and serve over the pasta of your choice with freshly grated parmesan cheese for a dish thats both hearty and comforting.

Instructions

  1. Run sausages under cold water for 10 seconds, cut lightly down each sausage scoring the skin and peel. Discard the skins.
  2. In a large deep frying pan heat olive oil over medium high heat until hot. Add sausage meat and break up with a wooden spoon. Cook until lightly caramelized (approx. 5 minutes).
  3. Add and red onion to meat in pan, reduce heat to medium and cook for about 3 minutes until onion is tender.
  4. Add the garlic seasoning and stir. Add tomato puree and cook for a couple of minutes.
  5. Add the cherry tomatoes and stir everything together. Slowly add water about half way up and lightly simmer, stirring regularly for 5 minutes until the sauce has thickened.
  6. While the sauce cooks, cook the pasta according to pack instructions.
  7. When the sauce is almost ready, add the spinach and cook until wilted, stir everything well and taste to check the seasoning.
  8. Drain the pasta and add to the sauce, followed by half the parmesan.
  9. Stir everything together and serve, topped with more parmesan and some more fresh basil leaves
  10. Cooking Tip: Before draining the pasta, reserve some of the cooking water. If pasta sauce is too thick, add a splash of pasta water until desired consistency. Cooking water from pasta also contains lots of starch and will help the sauce cling to pasta.
