Sausage takes center stage in a delicious ragu seasoned with the bold taste of Schwartz Garlic Seasoning. Combine with fresh spinach and serve over the pasta of your choice with freshly grated parmesan cheese for a dish thats both hearty and comforting.

- Run sausages under cold water for 10 seconds, cut lightly down each sausage scoring the skin and peel. Discard the skins.
- In a large deep frying pan heat olive oil over medium high heat until hot. Add sausage meat and break up with a wooden spoon. Cook until lightly caramelized (approx. 5 minutes).
- Add and red onion to meat in pan, reduce heat to medium and cook for about 3 minutes until onion is tender.
- Add the garlic seasoning and stir. Add tomato puree and cook for a couple of minutes.
- Add the cherry tomatoes and stir everything together. Slowly add water about half way up and lightly simmer, stirring regularly for 5 minutes until the sauce has thickened.
- While the sauce cooks, cook the pasta according to pack instructions.
- When the sauce is almost ready, add the spinach and cook until wilted, stir everything well and taste to check the seasoning.
- Drain the pasta and add to the sauce, followed by half the parmesan.
- Stir everything together and serve, topped with more parmesan and some more fresh basil leaves
- Cooking Tip: Before draining the pasta, reserve some of the cooking water. If pasta sauce is too thick, add a splash of pasta water until desired consistency. Cooking water from pasta also contains lots of starch and will help the sauce cling to pasta.
