- Melt the butter in a large saucepan over medium high heat and fry the onion until softened. Add the rice and spices and cook for a further minute. Add water and bring to the boil. Cover and simmer for 10 minutes.
- Add the fish and peas. Cover and cook gently for a further 5 minutes, then remove from heat and let stand for a further 5 minutes.
- Gently stir through the eggs and serve garnished with lemon wedges and yogurt.
