Ingredients

  • 1 good quality liquid chicken stock (or bone broth)
  • 500 (17 ) water
  • 1 sesame oil
  • 4 garlic cloves, finely grated
  • 1 thumb sized piece of ginger, finely grated
  • 1 chilli, finely chopped
  • 2 soy sauce
  • 1 rice vinegar
  • 1 honey
  • 2 star anise whole
  • 6 skinless chicken thighs, skinless and boneless
  • 3 pak choi, finely sliced (separated into stems and leaves)
  • 200 (7 ) rice noodles
  • 4 Spring onions, sliced
  • 2 fresh limes
  • Fresh coriander (optional)
  • 2 tbsp crispy chilli oil (optional)

Instructions

  1. Take a large saucepan and add the sesame oil and heat on medium. Add grated garlic , chilli and ginger, fry for a couple of minutes until fragrant. Add chicken stock, water, star anise and chicken thighs. Bring to low simmer and cook for 15 minutes or until cooked through. *
  2. Remove the chicken thighs to a bowl using a slotted spoon and let cool a little. Shred with forks, discarding any cartilage or excess fat. Set this aside while you finish the broth. *
  3. Add the soy sauce, rice vinegar, honey and noodles and sliced pak choi stems. Stir and simmer for 5 minutes. *
  4. Add the pak choi leaves and simmer for another minute, check the noodles are cooked, squeeze one of the limes into the soup and divide between four bowls, topping with the shredded chicken and spring onion. *
  5. Add the herbs and chilli oil (if using) and serve with a wedge of lime on the side! *
