- 100 caster sugar
- 450 double cream
- 25 icing sugar
- 4 large egg yolks
- 5 limes, zest and juice (approx. 60g)
- 325 double cream
- 1 icing sugar
- 1 seeds only
- 450 fresh strawberries, hulled & roughly chopped (200g reserved for sauce)

- Line a large flat baking tray with greaseproof paper. *
- Pre-heat oven to 110ºC. *
- add the sugar a tablespoon at a time while whisking until you have firm peaks, and the sugar is all incorporated. *
- Spoon the meringue on to the lined baking tray in rough meringue shapes, approx. 2 tbsp per one, leaving two cm of space between each one. *
- Bake in the center of a preheated oven for 30-35 minutes. Remove and leave to cool completely. *
- In a high-speed blender (I used a nutri-bullet), place 200g of chopped strawberries and blend for a minute or two until smooth, set aside. *
- In a large bowl, whip cream, icing sugar and vanilla seeds with an electric whisk until very soft peaks. *
- Fold gently through the cream, the remainder of the strawberries, half the sauce and ¾ of the meringues (broken up). *
- To serve, pile into bowls, drizzle over more strawberry sauce and extra crushed meringues! *
