  • 2 egg whites
  • 100 grams caster sugar
  • 450 grams double cream
  • 25 grams icing sugar
  • 4 large egg yolks
  • 5 limes, zest and juice (approx. 60 mililitres)
  • 325 mililitres double cream
  • 1 teaspoon icing sugar
  • 1 Schwartz® Vanilla Pod, seeds only
  • 450 grams fresh strawberries, hulled & roughly chopped, divided

Instructions

  1. Line a large flat baking tray with greaseproof paper.
  2. Pre-heat oven to 110°C / 225°F / 90°C Fan / Gas Mark 1/4.
  3. In a clean dry bowl, beat egg whites with electric whisk on high speed until foamy. Slowly add the sugar about a tablespoon at a time mixing until you have firm peaks, and the sugar is all incorporated.
  4. Spoon the meringue on to the lined baking tray in rough meringue shapes, approximately 2 tbsp each, leaving 2-cm of space between each one.
  5. Bake in the center of the preheated oven for 30-35 minutes. Remove and leave to cool completely.
  6. In a high-speed blender, place 200 grams of the chopped strawberries and blend for a minute or two until smooth, set aside.
  7. In a large bowl, whip cream, icing sugar and vanilla seeds with an electric whisk until very soft peaks.
  8. Fold the remainder of the strawberries and half the sauce into the cream. Light crush about ¾ of the meringues and gently stir into the cream mixture.
  9. To in bowls, drizzle over remainer of the strawberry sauce and meringues
