  1. Set air fryer to 200 °C.

  3. Squeeze grated potato through a clean fine cloth or muslin (or a clean tea-towel will work too), getting out as much excess water as possible (you should be left with approx. 350g after the water has gone).

  5. In a bowl, add the squeezed out grated potato and butter, mix well.

  7. Weigh into 25g portions for canapes and 50g portions for a side.

  9. Once they are all portioned, press together into little discs, keeping some ragged bits/texture.

  11. Add the Crispy Roast Potato sachet to a shallow bowl and toss each rosti in the seasoning.

  13. Then in another shallow bowl, coat the rosti with the olive oil.

  15. Place evenly spaced out in air fryer and cook for 10 minutes, turn over and put back in for another 5 minutes for canapes, or another 10 mins if youre making side-sized rosti.

  17. To serve, sprinkle with a little black pepper.
