Ingredients

  • For the Waffles:
  • 1 egg
  • 225 (8 ) self-raising flour
  • 1 golden caster sugar
  • 225 (8 ) milk
  • 50 (2 ) butter, melted and cooled
  • 1 sunflower or vegetable oil
  • For the Gravy:
  • 300 (1/2 ) boiling water
  • 3 heaped Signature Chicken Gravy
  • For the crispy chicken fritters
  • 250 (9 ) milk
  • 2 eggs
  • 200 (7 ) all-purpose flour
  • 1 boneless, leftover cooked chicken pieces, sliced into 2.5 cm (1 inch) pieces if possible
  • Vegetable oil, for frying
  • 2 chicken

Instructions

  1. Preheat an oven to 100°C/80°C Fan to keep the waffles warm.*
  2. For the waffles: crack the egg into a large bowl, then add the flour, sugar and a generous pinch of salt. Gradually whisk in the milk followed by the melted butter. Continue to whisk until you have a smooth batter - this will be easier using a handheld mixer. *
  3. Preheat a waffle maker according to the manufacturer's instructions and brush with a little of the oil. Ladle in enough batter to just cover the surface. Cook following the manufacturer's instructions (usually 5-6 minutes) or until the waffles are golden brown and crisp. Remove from the waffle maker, transfer to a tray and keep warm in the preheated oven whilst you prepare the rest of the recipe.*
  4. For the Crispy Chicken Fritters: in a medium bowl, whisk together the milk and eggs and set aside.*
  5. In a large bowl, add the flour, paprika and onion chicken seasoning and mix well to combine. Dip the chicken pieces in the milk and egg mixture. Let the excess drip off into the bowl before coating in the seasoned flour. Place onto a separate plate until you have enough for 6 servings.

  7. Next, heat a deep-fat fryer or large, deep pan filled with oil to around 175°C. Carefully fry the chicken, a few pieces at a time, for about 3-5 minutes, or until golden brown and crispy. Remove the crispy chicken pieces using a slotted spoon and place onto a paper towel-lined plate to drain off any excess oil.*
  8. Meanwhile, prepare the Schwartz Signature Chicken Gravy with the boiling water according to the packet instructions.

  10. To serve: place a warm waffle onto a plate, top with the crispy chicken and serve with the gravy.*
