  • 1 tablespoon oil
  • 4 x 175 grams (4 x 6 ounces) boneless, skinless cod fillets
  • 8 rindless smoked streaky bacon
  • 1 sachet Schwartz® Creamy Parsley Sauce
  • 300 millilitres (½ pint) semi-skimmed milk
  • 1 tablespoon Schwartz® Flat Leaf Parsley
  • Schwartz® Sea Salt and Black Peppercorns Grinders Set to season

Instructions

  1. Season the cod with salt and pepper on both sides.
  2. Heat the oil in a large frying pan over a medium-high heat. Add the fish. Cook for 2 minutes, then flip over and continue to cook for a further 4 minutes, or until the fish is just cooked.
  3. Grill the bacon until very crisp. Break the bacon into small pieces and sprinkle over the cod fillets.
  4. Stir the sauce mix with the milk in a small saucepan. Bring to the boil, stirring continuously. Simmer for a couple of minutes, until the sauce is smooth and thickened.
  5. Serve the cod on a bed of creamy mashed potatoes with plenty of butter and Schwartz Parsley, then pour over the prepared sauce.
