Courgette Chilli Garlic pasta

As easy as combining a few convenient ingredients from your storecupboard, this delicious pasta dish wins dinner every time. Simply combine cooked pasta with grated courgette, garlic, red chilli, olive oil, and Schwartz® Dried Parsley, with salt and pepper to taste.

- 1 extra virgin olive oil
- 1/2 chillies crushed 75g (or less if you can't handle the heat!)
- 2 garlic granules 145g
- 2 courgette, grated
- 1 parsley flat leaf
- 1 dill
- 150 Farfalle (or pasta of choice)
- salted water
- Salt and pepper to taste
- To Serve
- Parmesan, finely grated (optional)

- In a medium saucepan, add salted water and bring to the boil. Add pasta and simmer for 10 minutes. *
- While the pasta cooks, make the sauce. In a medium frying pan, add the olive oil, heat on medium, add the garlic and chilli and fry for a minute.

- Add the grated courgette, stir and fry for another couple of minutes, then add the parsley, a little water and season to taste. *
- Once the pasta is cooked, drain (reserving a cup of pasta water). Add the pasta and a little water to the sauce if needed and toss everything together. *
- Serve with a little extra olive oil if you like and parmesan for added indulgence. *
