Instructions

  1. In a small saucepan, add an inch of water. Place a heatproof bowl onto the saucepan, not touching the water. Add the milk chocolate to the bowl and over a medium heat, melt, stirring regularly.
  2. Add the ginger, stir again and carefully spoon the melted spiced chocolate into silicone ice cube tray with 12 cubes, only filling them halfway. Tap the tray gently twice on the work surface, getting it into the corners and rid of any air bubbles.
  3. Place flat in the freezer.
  4. Repeat the above in a new bowl with the dark chocolate, but this time, add cinnamon.
  5. Remove the slightly set tray from the freezer and top up with the dark chocolate, tap gently.
  6. Then add your toppings- some may be plain, some with marshmallows, some with broken up candy cane.
  7. Place back in the freezer for 10 minutes.
  8. Take the partially set cubes out of the freezer and insert a lollipop stick 2/3rds of the way into each cube, making sure its straight.
  9. Put back in the freezer for 2 hours or until frozen solid.
  10. To serve, stir into 240 millilitres hot milk of your choice. Cooking Tip Customize however you like! Make them all milk or dark chocolate, or even try white chocolate. Change the toppings to any of your favourites.
