- 25 unsalted butter
- 150 pancetta, diced
- 2 large eggs
- 1 garlic granules 145g
- 1/4 black peppercorns mill adjustable finely ground
- 50 pecorino, finely grated (you can use parmesan if you like)
- 150 spaghetti (or pasta of choice)
- salted water

- In a medium saucepan, add salted water and bring to the boil. Add pasta and simmer for 10 minutes. *
- While the pasta cooks, make the sauce. In a medium frying pan, add the butter, heat on medium high, once melted add the pancetta and fry until the fat has melted and its crisp, add the garlic granules and stir.
- *
- In a medium bowl, whisk together the eggs, 40g pecorino and black pepper. *
- Once the pasta is cooked, drain (reserving a mug of pasta water). Add the pasta to the frying pan and coat with the pancetta mix. *
- Remove the pan from the heat and quickly add the egg/pecorino mixture to the pasta, mixing well and adding a little pasta water at a time until you have a glossy carbonara. *
- Serve immediately with the last 10g grated pecorino on top and extra cracked black pepper! *
