Cajun Chicken with Corn

Juicy, boldly seasoned Cajun chicken is just the meal for busy weeknights. Enjoy with a refreshing corn salad and Cajun lime mayonnaise for an extra burst of flavour.
Ingredients

- For the chicken:
- 1 skinless and boneless chicken thighs
- 6 cajun seasoning
- 2 extra virgin olive oil
- For the corn on the cob:
- 8 mini corn on the cobs
- 50 unsalted butter
- 1/2 chilli powder mild
- 1/4 coriander leaf
- For the Cajun lime mayonnaise:
- 150 mayonnaise
- cajun seasoning
- 1 lime, zest and juice (use only half juice first and taste)
- For the salad:
- 2 oranges, skin removed and cut into segments
- 200 watercress
- 200 radishes, thinly sliced
- 1 olive oil

- Pre-heat oven to 200ºC grill setting. Line a baking tray with foil. *
- In a medium bowl, mix the chicken thighs with oil and the Cajun seasoning until well coated. *
- Place the chicken thighs on the lined baking tray, under the grill for 4 minutes, turn over and cook for another 4-5 minutes until slightly charred and cooked through. *
- While the chicken cooks, bring a pan of water to the boil, add the corn and cook for 5 minutes. *
- Once the corn is cooked, drain and char in a dry frying pan to get some colour. Once nicely coloured, add butter and sea salt. Remove to a serving plate and garnish with chilli powder and coriander leaf. *
- In a small bowl, combine the mayonnaise ingredients. In a large bowl, combine the salad ingredients. *
- Serve the chicken thighs with lime wedges and the salad/corn and Cajun/lime mayonnaise on the side. *
