  • 1 tablespoon olive oil
  • 675 grams sirloin steak thinly sliced and fat removed
  • 50 grams unsalted butter
  • 1 brown onion
  • 200 grams chestnut mushrooms, sliced
  • 4 cloves of garlic minced
  • 2 teaspoons Dijon mustard
  • 50 mililitres brandy
  • 175 grams good quality beef stock
  • 125 grams soured cream
  • 1 teaspoon Schwartz® Coarse Ground Black Pepper
  • 2 tablespoons Schwartz® Flat Leaf Parsley

  1. In a medium deep frying pan, heat the oil on high heat until it’s hot and quickly sear the beef in two batches very quickly but make sure it’s nice and golden, remove and place on a plate until the end.
  2. Reduce the heat to medium-high and add the butter to the same pan. When melted, add onion and mushrooms. Cook this down for 5-10 minutes until soft and starting to caramelize.
  3. Add the garlic and sweat for another couple of minutes, add the mustard, stir and add the brandy and reduce till it’s gone (if adding).
  4. Add the stock and reduce by half while stirring regularly, lower the heat and add the soured cream, part cooked steak and season to taste with salt and black pepper, cook for 2 mins, just till everything is piping hot, then to finish add the parsley leaf.
  5. Serve with rice or even over pasta with green vegetables of your choice.
