Air-fried Cajun Chicken with roasted veg & feta

Prepped ahead of time, this delicious meal of juicy air-fried Cajun chicken thighs, tender roasted veggies, and salty, crumbled feta is the perfect solution for busy weeknights.
Ingredients
- chicken
- 4 skin on, bone in chicken thighs (approx. 600g)
- 1 olive oil
- 1 cajun seasoning
- vegetables
- 1 red onion, into 6-8 wedges
- 1 red pepper, sliced into strips
- 1 courgette, sliced into 1cm rounds
- 1 olive oil
- 1 cajun seasoning
- 50 feta, crumbled

Instructions
- In a medium bowl, add chicken thighs, olive oil and 1 tbsp Cajun seasoning. Rub olive and seasoning into the chicken until well coated. *
- In a separate bowl add the vegetables, olive oil and 1 tsp of Cajun seasoning and toss together until coated.
- *
- Pre-heat air fryer to 200 degrees. *
- Place chicken thighs, skin up in the air fryer and cook for 10 minutes, add the vegetables and cook for a further 10 minutes. *
- Make sure the chicken is cooked by checking there are no pink juices. *
- Once everything is cooked, serve with feta crumbled over the vegetables. *
