Sweet and Spicy Chicken Wings with Bacon

- 2 tablespoons baking powder
- ½ teaspoon chilli powder
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 900 grams (1lb 15oz ) chicken wings
- 2 tablespoons oil
- 5 tablespoons FRANKS RedHot Buffalo Wings Sauce
- 20 grams (0.7 ounce) unsalted butter
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 50 grams cooked bacon, finely chopped
- 2 tablespoons finely chopped chives

- Preheat the oven to 180°C / 160°C Fan / Gas Mark 4.
- Mix the baking powder, chilli powder, salt and black pepper together in a mixing bowl, then toss the chicken wings in it to thoroughly coat. Transfer to a lined baking tray and drizzle with oil. Bake in the oven for 25 minutes.
- To make the sauce, place a saucepan on a low heat and add the FRANK'S RedHot® Buffalo Sauce, unsalted butter, maple syrup, balsamic vinegar and brown sugar. Cook for 5 minutes, then set aside.
- Take the chicken wings out of the oven and increase the oven temperature to 200°C / 180°C Fan / Gas Mark 6. Brush the chicken wings with ¾ of the sauce and transfer back to the baking tray. Place back in the oven for a further 25 minutes, or until crisp and golden.
- Drizzle with the remaining sauce and scatter with the chopped cooked bacon and chives to serve.
