Ingredients

  • 1 tbps olive oil
  • 500 grams chicken or turkey mince
  • 8 eggs
  • 8 regular tortilla wraps
  • 1 small onion, peeled and chopped
  • 1 small red bell pepper, deseeded and chopped
  • 1 small yellow bell pepper, deseeded and chopped
  • 1 tsp Schwartz® garlic granules
  • 1 tsp Schwartz® ground cumin
  • 120 mililiters salsa
  • 120 grams diced deli ham
  • 50 grams grated Monterey Jack cheese SUBSTITUTION: Mild Cheddar
  • 80 mililiters Cholula Original Hot Sauce
  • Chopped spring onion (garnish)

Treat the brunch bunch to this easy recipe for huevos rancheros. Made in muffin tin cups each lined with a slice of ham and then loaded with a hearty meat, cheese, and veggie filling, cups come out of the oven ready for your favorite garnishes and Cholula; Original Hot Sauce.

Instructions

  1. Preheat oven to 170°C / 150°C Fan / Gas Mark 3. Heat olive oil in large skillet on medium heat. Add onion and peppers; cook and stir 2 to 3 minutes until or until softened. Add chicken mince, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Cholula Hot Sauce; reduce heat and simmer 5 minutes.
  2. Fold tortilla wraps and press into 8 muffin tin cups. Divide cooked chicken mixture between muffin cups, adding 1 tablespoon of the diced ham and salsa to each. Crack 1 egg overtop of filling in each muffin cup and sprinkle with cheese.
  3. Bake 22 to 25 minutes or until yolks are set. Sprinkle with green onion and drizzle with additional Original Hot Sauce to serve.
  4. Enjoy!
