Treat the brunch bunch to this keto-inspired recipe for huevos rancheros cups. Made in muffin tin cups each lined with a slice of ham and then loaded with a hearty meat, cheese, and veggie filling, cups come out of the oven ready for your favorite garnishes and Cholula Original Hot Sauce.

- 1 pound ground chicken or turkey
- 6 eggs
- 6 tortilla wraps
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow bell pepper
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/2 cup salsa
- 3/4 cup shredded Monterey Jack cheese
- 1/3 cup Cholula Original Hot Sauce
- Diced deli ham
- Chopped green onion (garnish)

- Preheat oven to 175°C. Heat olive oil in large skillet on medium heat. Add onion and peppers; cook and stir 2 to 3 minutes until or until softened. Add ground chicken, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Cholula Hot Sauce; reduce heat and simmer 5 minutes.*
- Fold tortilla slices and press into 6 muffin pan cups. Divide cooked chicken mixture between muffin cups, adding 1 tablespoon of the ham and salsa to each. Crack 1 egg overtop of filling in each muffin cup and sprinkle with cheese.*
- Bake 22 to 25 minutes or until yolks are set. Sprinkle with green onion and drizzle with additional Original Hot Sauce to serve.*
