- Preheat oven to 170°C / 150°C Fan / Gas Mark 3. Heat olive oil in large skillet on medium heat. Add onion and peppers; cook and stir 2 to 3 minutes until or until softened. Add chicken mince, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Cholula Hot Sauce; reduce heat and simmer 5 minutes.
- Fold tortilla wraps and press into 8 muffin tin cups. Divide cooked chicken mixture between muffin cups, adding 1 tablespoon of the diced ham and salsa to each. Crack 1 egg overtop of filling in each muffin cup and sprinkle with cheese.
- Bake 22 to 25 minutes or until yolks are set. Sprinkle with green onion and drizzle with additional Original Hot Sauce to serve.
